Here is another fabulous time-saving overnight granola.
These make the best quick breakfast, snack or even a light lunch for people on the go. If you haven’t got time to have it at home, just make sure the lid is on properly, and pop in your bag (imagine your overnight granola spread all through your bag ARGHHHH, or maybe don’t think about that!!!!. and enjoy when you get to work.
This tropical overnight granola evokes feelings of laying on a sandy beach in some far off exotic country…. Bliss!!!
Asides from that, it is real yummy and packed full of goodness, thanks to the wonderful Homemade Muesli which is full of healthy little additions like chia, sunflower and pumpkin seeds, to name a few, the perfect way to start your day and keep you full and satisfied until lunch.

If you have not got time to soak the muesli/granola overnight you don’t have to, the soaking just makes it easier for our body to digest.
Notes – you can substitute the granola for plain oats if you wish.
- ½ cup granola
- ¼ cup shredded coconut
- ½ cup of coconut milk or your prefered milk
- ½ cup of your favourite sugar free yoghurt
- ½ cup pineapple
- place all ingredients in a mason jar or bowl and stir until well combined
- Refrigerate overnight
- Serve in the morning as is or top with toasted coconut, pineapple and slithered almonds
