Chia Raspberry Mousse

 This Chia Raspberry Mousse packs a great nutritional punch thanks to the chia seeds, raspberries and coconut milk.

It makes a great start to your day or a healthy sugar free dessert option.  Take five minutes at night and wake up to this delicious breakfast for a stress free morning.

This is obviously not a true mousse, but the addition of the chia seeds sets the liquid and you end up with a quick healthy YUMMY protein packed meal.

Feel free to use your favourite milk in place of the coconut milk, this recipe is only for 1 serve, just use the same proportions for each additional serve required.

Serves: 1 serve
  • ¼ cup raspberries
  • ½ cup coconut milk
  • 1 tablespoon of chia seeds
  1. mash or blend raspberries with coconut milk
  2. Add chia seeds
  3. pour into a small bowl or ramekin
  4. Set in the fridge for a least an hour or overnight
