This is obviously not a true mousse, but the addition of the chia seeds sets the liquid and you end up with a quick healthy YUMMY protein packed meal.
Feel free to use your favourite milk in place of the coconut milk, this recipe is only for 1 serve, just use the same proportions for each additional serve required.

Chia Raspberry Mousse
Serves: 1 serve
- ¼ cup raspberries
- ½ cup coconut milk
- 1 tablespoon of chia seeds
- mash or blend raspberries with coconut milk
- Add chia seeds
- pour into a small bowl or ramekin
- Set in the fridge for a least an hour or overnight
