Slow Cooker Pulled Pork

This slow cooker pulled pork is so simple and convenient, just turn it  on in the morning and by dinner time you have perfectly cooked meat that only took you five minutes to prepare!

Some people hate slow cookers saying that every dish tastes the same, I would strongly disagree and this slow cooked pork is the prime example.  You can serve the pork once it is cooked as you would any roast pork with vegetables etc or you can turn it into any number of exciting and delicious meals, such as quesadilla, enchilada’s, pasta or sliders the list is endless really

I always use a shoulder of pork and this really needs the long slow cooking that a slow cooker offers, but you end up with tender moist perfectly cooked pulled pork.

Ingredients

  • 1.5 - 2 kg pork shoulder , bone-in, skin on
  • 1 onion
  • 2 cloves of garlic
  • 1/2 cup white wine
  • 1 cups stock/broth
  • 1 bay leaf

Instructions

  1. Place all the ingredients into the slow cooker and turn on to low for 8- 10 hours
  2. Remove from slow cooker and shred with 2 forks, the meat should fall apart easily
  3. If you are serving the pork as a "roast" and want crispy pork crackle, remove the skin prior to cooking sprinkle with salt and place in the fridge with a paper towel over top. 15 mins prior to serving your meal preheat your grill to high and cook the skin until bubbled and crispy (you must keep an eye on it so it does not burn!)
