Smoothies like these are fabulous, they make such nutritious and delicious snacks or when you are needing a bit of a pick me up, we generally have a healthy smoothie most days around 3 pm just to help keep the blood sugar levels even until dinner time, but they’re also great as an addition to a light lunch or as a healthy dessert.

  • 1 cup coconut milk
  • ¼ cup pineapple
  • a handful of baby kale or spinach
  • ½ cup ice
  1. place all ingredients in your blender and blitz until smooth and creamy
