Bounty Balls

  • 2 cups coconut (sulphite free)
  • ½ cup ground almonds (optional)
  • 3 tablespoons rice malt syrup
  • 2 tablespoons coconut oil or butter
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons coconut milk or water
  • pinch of salt
  1. melt butter or coconut oil and rice malt syrup together
  2. Add all ingredients to a blender or food processor and mix until well combined
  3. Roll into balls and set in the fridge or freezer
  4. melt chocolate and coconut oil together
  5. Once melted and smooth, take your bounty balls out of the fridge and dip in the chocolate
  6. place on a tray lined with baking paper and leave at room temperature to set
  7. I keep mine in the fridge and they will last up to 2 weeks
