Easy Oat Bars

These easy Oat bars are just that!  EASY, but other than that the are very quick and very yummy and my kids love them.

Store brought or packaged muesli bars are not something we buy as most contain huge amounts of added sugar.

So my way around this is to make these delicious and easy oat bars, I normally make them plain, but that is just because I have a VERY fussy 5 year old.

But the options are endless for extra healthy additions to be added, I have made them before with added sunflower seeds, pepitas (pumpkin seeds), chia seeds and cinnamon which  3 of us in the house LOVED!  but fussy 5 year old was not so keen on!!

Ingredients

  • 3/4 cup powdered glucose or sugar if you are not fructose free
  • 2½ cups desiccated coconut
  • 2½ cups rolled oats
  • 250 grams butter, melted
  • Optional
  • 2 teaspoons of cinnamon
  • reduce oats and coconut to 2 cups of each and add 1/2 cup of sunflower seeds and 1/2 cup pumpkin seeds

Instructions

  1. Preheat your oven to 160 C or 320 F
  2. Line a slice tin with baking or parchment paper
  3. In a bowl mix together the sugar, coconut and rolled oats and extras if using
  4. Pour in the melted butter and mix until all ingredients are thoroughly combined.
  5. Press into a lined 24cm x 30cm slice tin.
  6. Bake at 160°C for 25-30 minutes. Cut into bars while still warm.
  7. Store in an airtight container for up to a week
