Bounty Balls

- 2 cups coconut (sulphite free)
- ½ cup ground almonds (optional)
- 3 tablespoons rice malt syrup
- 2 tablespoons coconut oil or butter
- 1 teaspoon vanilla extract
- 1-2 tablespoons coconut milk or water
- pinch of salt
- melt butter or coconut oil and rice malt syrup together
- Add all ingredients to a blender or food processor and mix until well combined
- Roll into balls and set in the fridge or freezer
- melt chocolate and coconut oil together
- Once melted and smooth, take your bounty balls out of the fridge and dip in the chocolate
- place on a tray lined with baking paper and leave at room temperature to set
- I keep mine in the fridge and they will last up to 2 weeks
