Lemon Poppy Seed Muffins

  • 225g self raising flour
  • 175g dextrose
  • zest of 2 lemons
  • 1 tablespoon poppy seeds
  • 175g butter
  • 2 large eggs
  • ¼ cup plain sugar free yoghurt
  1. Preheat oven to 338°F/170C
  2. Coat muffin tin with cooking spray.
  3. In a large bowl, cream the butter and sugar until creamy and fluffy.
  4. Add the eggs Beat well to incorporate
  5. In a separate bowl, stir together the dry ingredients, poppy seeds, and lemon zest.
  6. With the mixer on low speed, add the dry ingredients to the creamed mixture,Beat just until smooth.
  7. Bake at 350°F for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool for 5 minutes before removing to cool completely.
