Caramelized Onion & Tomato Sauce

Serves: 3 cups
Bold flavours make this sauce so good, you do need a little time, however it's worth it.
  • 2 large onions caramalized
  • 1 can chopped tomatoes
  • 1 cup water or stock (beef, chicken or vege)
  • ½ cup white wine
  • ⅛ teaspoon mustard powder
  • 1 teaspoon garlic powder or 2 fresh garlic cloves
  • I peeled grated apple
  • ½ teaspoon mixed herbs
  • pinch of nutmeg
  • Salt and pepper to taste
  1. Combine all ingredients in a large saucepan
  2. stir to combine and cook over a medium- low heat for 20-30 minutes until thickened
  3. You can blitz it with a stick blender to make a smooth sauce or leave it as is for a more rustic look.
